What is a coffee roaster?

To understand what a coffee roaster is, first know what it does. Roasting is cooking beans: shaping  flavors for consumption by manipulating physical characteristics. Finding a roasting method is integral to good coffee.

There are many kinds of roasting machines and methods. The most common are drum or hot air machines. Otherwise, you may find packed-bed, tangential, or centrifugal types. Today, hybrid machines provide many automated operation modes in one appliance.

How does coffee roasting work?

Coffee roasting works in many different ways. Today, many emerging methods popularize rapidly. In each process, the same basic fundamental steps are true:

  1. Turn up the heat! Preheat the drum, start hot airflow, or spark an open flame to take moisture out of your raw beans.

  2. Get your green beans. Fill your drum, cylinder, or plate with desired volume of beans. Different roasters have different capacities, so pay attention to ensure an even roast.

  3. Let them dry. Beans will dry in five to eight minutes. Either the beans or hot air circulate to evenly roast avoiding defect or scorching. Their color ranges from a light yellow to brown and smells like fresh popcorn at this point. Note that around 7 minutes in, the beans expand like popcorn as well.

  4. Cool them off. Transfer beans to a sieve or tray to cool keeping their freshness. A destoner is sometimes used to remove stones or other defects that come in green beans.

  5. De-gas and develop flavors in packaging, even during shipment. Either way, the coffee should rest for a few days.
